More Tomatoes!

I'm finished with the little heirloom tomatoes for now. No more until I get back to the store. I had so many I needed to use today so I typed in "cherry tomatoes" on epicurious search and got lots of recipes. This one had great reviews so I have it a shot. Ok, so it looks like a mess, but it tasted great. Well, not according to Miss Picky, but the rest of us liked it a lot! The balsamic reduces to a nice sauce, although a pretty strong taste. Not exactly a gorgeous dish that makes you say, ahhhh, more like, ewwwww, but I'll be making this one again!



Sauteed Chicken with Yellow Grape Tomatoes

Makes 2 servings; can be doubled (I quadrupled!)

2 tablespoons olive oil
2 skinless boneless chicken breast halves (I used thin-sliced cutlets)
1 cup yellow grape tomatoes or 1 cup halved cherry tomatoes
2 garlic cloves, minced
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil

Heat olive oil in heavy medium skillet over medium-high heat. Sprinkle chicken with salt and pepper; add to skillet. Sauté chicken until cooked through, about 5 minutes per side. Transfer chicken to 2 plates. Add tomatoes and garlic to skillet; sauté 1 minute. Add balsamic vinegar and 1 tablespoon basil; sauté 30 seconds. Season sauce to taste with salt and pepper. Spoon sauce over chicken. Sprinkle with remaining 1 tablespoon basil and serve.

  1. I think the recipe sounds great, Carol! I'll save this one for when my yellow cherry tomatoes start to get ripe (if that ever happens!).

  2. Sounds great Carol! I've harvested 6 cherry tomatoes so far :-( The rest are green. I will remember to come back for recipes as soon as they ripen.

  4. Carol, we love cherry tomatoes and eat them like candy, but your recipe sounds very interesting and the picture looks fantastic. I have an endless supply of tomatoes ... Costco.

  5. Tasty!!!! I have tomatoes turning red now and lots more to come so I'll have to give this one a try. Sure does sound fresh and summery.

  7. Oh Carol, I spent all afternoon at Whole Foods yesterday, and actually had yellow grape tomatoes in my hand. I put them down to bag some other blessed thing and walked away, forgetting my yellow tomatoes. Oh, and shut up.

    Anyway, I can at least use the cherry tomatoes in my backyard, which are quickly ripening, and make this delicious and colorful dish, much to Ms. Picky's chagrin.
