Flashback Friday - Pom Salad

Joining Suzy at Kitchen Bouquet for another Flashback Friday!

Flashing back to a really great salad I had made a while back, one of the last posts of my original blog, There's No Thyme to Cook. I deleted that blog because of one little misclick. Is that a word? It is now. and it's out there in Blog Limboland, can't get it back, can't use the name, so now There's Always Thyme to Cook and this salad is so worth repeating!

For the Salad:
3 cups spinach leaves
1/2 cup sliced onions
1/2 cup oranges, peeled & diced
1/2 cup pomegranate seeds
1/4 cup salted peanuts, coarsely chopped

Optional: 1/2 cup grilled chicken, diced

Toss all ingredients together in a salad bowl. Coat with Vinaigrette.

For the Vinaigrette:
1/3 cup Pomegranate Juice
1/2 clove fresh garlic, chopped
1 tablespoon soy sauce
1 tablespoon lime juice or cider vinegar
1 tablespoon brown sugar
1 tablespoon olive oil
1/2 teaspoon black sesame seeds
salt & pepper to taste.

Whisk all ingredients together in a small bowl. Pour over Salad.

I added in some thinly slice red bell peppers, shredded carrots and shredded red cabbage.

  2. Just a drop-dead gorgeous salad Carol. I bet it tastes as good as it looks. One "misclick" ... doesn't make much sense to me that it couldn't be restored, but at least you're able to blog (which is good for us).

  7. Sounds good but where do you get the pom. seeds? I shouldn't have the the pom seeds have much fat??

  8. I got the seeds from Trader Joe's! No fat, but fiber. They're juicy seeds, not nuts :) Healthy!

  10. I'm reading down the comment list getting ready to comment and I wasn't getting Cindy's comment. Then you came back and showed us and suddenly I get it too and now I can't type because I am laughing so hard! I am actually quite glad to have a new thing to associate poms with since they personally always remind me of BB (bluebells). This salad does sound good!

  11. The dressing looks quite tasty. I ordered some pomegranate juice and was looking for a dressing...this is wonderful, thank you!
