Mosaic Monday! Happy Hanukkah with latkes and applesauce!

Joining Mary at the Little Red House for another fun Mosaic Monday! Stop by to see all the Mosaics this week!  I made the Canvas Panel Mosaic at Big Huge Labs using the Framer, then clicking on Canvas Panels!




Eight of those apples became applesauce for latkes!  I used Fuji, Granny Smith and Braeburn. When my kids were small I found a fun apple peeler that worked out really well, not just for apples, but for potatoes, too.








Be really careful and not so dumb as to keep your ingredient bowl right next to the apple peeler when you try to get the core off the silly gadget! I figured that out after the first apple! Nothing like honey and apple juice all over the place. Well, at least I didn't burn anything. but then I'm not up to latkes yet!







Ten Minute Applesauce

Printable Recipe

3 Golden Delicious apples, peeled, cored, and quartered (I also use Granny Smith and Braeburn)
3 Fuji apples, peeled, cored, and quartered
1 cup unfiltered apple juice (filtered clear juice works, too)
2 tablespoons cognac or brandy (I used Calvados)
2 tablespoons butter
3 tablespoons honey
1/2 teaspoon ground cinnamon (I used more)

In a microwave-safe container with a lid, combine apples with all other ingredients. Close lid, leaving one corner of lid open to allow steam to escape. Microwave on high for 10 minutes.

Using a hand blender, blend to whatever consistency you like. Serve hot immediately or chill for later use. You can also use a potato masher.

Stop back tomorrow, later on these potatoes and onions ...



will become potato latkes! Happy Hanukkah!

    We tried our latke box mix this morning and it was easy and fun!

    I used to care (part time) for a Jewish couple and I got hooked to their matzo ball soup and had introduced it to my daughter and she loves it!

  2. Ooops, I really love the framer at bighugelabs. For the apple sauce, I omit the cinnamon, not a favorite here, except me.

  3. Homemade applesuce...yum! Reminds me of my grandmother who always made it from scratch using apples she had grown herself! My daughter has that apple peeler...wonderful invention! Happy week!...Debbie

    I had a good apple peeler, M broke it.
    Now I have another and it stinks..

    So tell me the name of yours...I used to use it a lot when we picked apples.

    I think I can peel potatoes faster by hand, you know, Irish, could peel them by age 5!

I couldn't tell you the last time I had homemade applesauce, a lifetime ago...any apples that come into this house have to be made into an apple pie or Howard's lip would be dragging on the ground, can't stand to see an old man pout!I have an old apple peeler that I have never tried, always figured I could do it just as fast with a paring knife!

  13. I need one of those apple peelers! Potato pancakes are HUGE in Wisconsin with the Fish Fry Fridays that are so prevalent here. I love mine with applesauce. John needs maple syrup - Weirdo!

  16. I love apples and applesauce ... especially if I can make it in ten minutes! Love your photos and mosaic ... for some reason I've never been able to get Big Labs to work for me but perhaps I'll give it a go again because I love that 'framing' technique and don't know whether I could do that with Photoshop. As usual ... I'm sharing mosaics on three of my blogs ... just because ;-)
