Mosaic Monday: Chili

Today is one really rainy day! It's one of those days where you just need something simmering on the stove. Chili works! I may even try to make some corn bread to go with it, but even from a mix, they end up burned. but then again, I have all day to get it right, and four boxes of mix in the closet!

Back to the chili. We love chili. Ground beef, beef chunks, chicken, turkey chili! Vegetable, not so much. I usually get Wick Fowler's to make a quick pot. All nice ingredients, and he saves me a step by having the pre-measured packets. I never said I wasn't lazy!  But every once in a while I get ambitious and Beef Chili with Ancho, Mole and Cumin is my go to recipe for fantastic beef chili. Ever since I first saw it posted to raves on a Cooking Forum by Karen (Riverrat) last year. Great recipe but cutting up a 4-lb chuck roast is work. I've made it with ground beef, too, also good! but try the chuck roast. and I added beans. Who cares about authenticity? My kid is a picky eater and she likes beans!

  4. I am smiling as I use to pick out ALL the beans as a child and leave them on my napkin:) Lucky you to have a kid who eats beans!

  6. Chili is the perfect cold weather food isn't it? I wish the Jets won yesterday so we could have had a big bowl of it during the Super Bowl! sigh I think I amy still make it and cheer for the Saints.

  10. The chili looks good, especially the one with the beans. It is so cold/windy here, chili sounds good, but we are having Spicy Chicken Cakes with Horseradish Aioli, the horseradish will warm us up!

  11. Carol, the perfect mosaic for bone-chilling days. ... We had chili tonight. It does seem to be the weather for it. My husband is not adventurous when it comes to chili; his only variation is whether it's spicy or really spicy ... no chicken chili for him.

    I've read the rave reviews for Riverrat's chili. It does sound delicious. I need to make it and expand my husband's horizons.

  17. Nothing like chili on a cold rainy day!
    Funny comment about burning your cornbread...I have a recipe for jalepeno corn bread I saw on Barefoot Contessa. Goes really good with chili.

  18. I have never heard of Wick Fowler's must be another regional brand. Chili is J's favorite and he tops his with cheese and fritos :) I have have made the white chicken but have never had any "red" version with anything other than ground beef - will definitely try the chuck roast version soon! Your photos are amazing as usual!

    Your chili looks good. You know I pick the beans out when Mike makes his.
    I have made it with the chuck, and yes, it is time consuming..
    You burn the cb even if you pour it in a pan and bake like brownies???
    Don't use a dark pan...you can do it! :)
