What a day!

This is it. Life as we know it has changed. Miss Picky got her Learner's Permit for Driver's Ed today. That calls for a celebration on her part! and a little nervousness on ours. Definitely calls for comfort food for me and her dad! Her celebration, her choice. Baked Ziti. One of her favorites. Besides the fact that the baby of our family is growing up, she's so happy about driving, this could be a good thing. I might even get a few errands out of her here and there after her road test. At least until the novelty wears off. But that's a long way off. For now, more gray hairs for me and more practice for her.



Baked Ziti

 Preheat the oven to 350 degrees F.
Prepare the ziti according to package directions but undercook it a bit, so it's not mushy when you bake it. Drain the ziti, I rinse if it's going to be baked. Shake off the excess water. Pour a little of your favorite marinara in the bottom of a baking dish, then put all the ziti in the dish. Top with blobs of ricotta (you can add an egg, but last time I forgot and we liked it!) and then cover with more marinara and then sprinkle with lots of shredded mozzarella. Cover with foil, nonstick foil works really well, and bake for about an hour. Take off the foil and bake until the mozzarella is starting to brown and bubble! I forgot the Parmesan cheese as well as the egg this time. Still really good. I used a jar of sauce. Rao's Marinara or Victoria Marinara. We like that best if I'm not making homemade.




Simple Russian Dressing
Printable Recipe

1/2 cup mayonnaise
1/3 cup ketchup (more or less to taste)
2 teaspoons pickle relish (optional)
fresh ground pepper, to taste
salt, to taste

Whisk equal parts mayonnaise and ketchup until smooth. Stir in pickle relish, if using. We don't. Refrigerate until ready to use.

Notes: You can also use chili sauce instead of ketchup, horseradish, capers, onions, a little bit of vinegar, or even hot sauce in the dressing, too. We like it simple. Just the mayo and ketchup, salt and pepper.

  5. Carol, congratulations to your Miss Picky! Definitely a rite of passage, but I definitely can relate to the nerves part. AND they grow up so fast. ... Your baked ziti and salad not only sound like perfect comfort food, but also a nice celebratory meal.

    It's to stressful for the parents who have to furnish drivers insurance. :)

  7. Congrats to Jodie! Seems like just the other day you were telling of things she was doing in grade school...they do grow up fast. You will acquire a few more gray hairs if she doesn't cause you to snatch yourself bald! Great looking ziti...

    I came here intending to do a search for your ziti and voila! I saw a recipe in the current WS catalog that sounded good. I picked up the pasta today. I didn't know some had ricotta & egg. Well, mine won't unless I go shopping again before Mike comes home. Bet yours was wicked rich!

  13. I seemed to have traded my cars keys for another set of worries when my older son started driving-it is such a great milestone in their lives and I have to color my hair more ften to hide the gray too.

    Baked Ziti is a wonderful comfort dish. A perfect celebration food.

  14. I definitely remember those learner permit days which scared the living daylight out of me:) I would drive in the car with my kids praying for all the other cars to get off of the road. My Dad taught me to park in the city during rush hour on a busy street. He figured I would be so scared I would concentrate and get it correct in a few tries. To this day I can park in any space in the city on the right or left side of the street just like a professional truck driver:)

  15. Funny post! I remember well when my kids got their permits and then licenses. Scared the wits out of me! But you know what? They really did well. Nobody screwed up, everyone got home on time. Have faith!

  17. I have a feeling "Miss Picky" will turn out to be a very good driver... as long as she get tips from her Dad !! LOL

    The baked zita looks really good - I have it saved for when I have a group coming over.. have you ever frozen it to take out at a later time?
