Flashback Friday: Clafouti

Haven't baked anything in ages and I was looking through my files and found this clafouti from a while back. My friend Jayne, from A Grain of Salt, had posted her Raspberry Clafouti, maybe on her blog? or maybe at one of the Cooking Forums and I remember hers looked and sounded so good. I made mine with blueberries and it was good. I think it's time to make it again. It was an easy recipe for me, a non-baker. You can see that I didn't even overbake it, it's not burnt, so I must have been paying attention that time! 

Yep, this was good and very easy!

3 eggs
1 1/4 cups milk
2/3 cup flour
1/3 cup sugar
2 teaspoons vanilla
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 1/2 cups raspberries (I used blueberries!)

Beat the eggs in the small bowl of an electric mixer until foamy. Add the remaining ingredients except the raspberries. Beat on low speed until smooth. Pour the batter into a buttered 9-inch pie plate. Sprinkle the berries on top. Bake at 350 degrees for 45 minutes. Sprinkle with powdered sugar before serving.

  5. This is a great summer dish! I love clafoutis, buckles, bettys etc. Such fun and so good with fresh fruit with a big scoop of ice cream on top!

  9. I just used up the last of my blueberries (frozen from last summer) in a sauce, of all things. Never even thought to make Clafouti.

    You know my friend, for someone who does not bake often, you hit this one out of the ballpark!
