Flashback Friday: Clafouti

Joining Suzy from Kitchen Bouquet for another Flashback Friday! Check out Kitchen Bouquet for more!

Haven't baked anything in ages and I was looking through my files and found this clafouti from a while back. My friend Jayne, from A Grain of Salt, had posted her Raspberry Clafouti, maybe on her blog? or maybe at one of the Cooking Forums and I remember hers looked and sounded so good. I made mine with blueberries and it was good. I think it's time to make it again. It was an easy recipe for me, a non-baker. You can see that I didn't even overbake it, it's not burnt, so I must have been paying attention that time!

Yep, this was good and very easy!

Printable Recipe

3 eggs
1 1/4 cups milk
2/3 cup flour
1/3 cup sugar
2 teaspoons vanilla
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 1/2 cups raspberries (I used blueberries!)

Beat the eggs in the small bowl of an electric mixer until foamy. Add the remaining ingredients except the raspberries. Beat on low speed until smooth. Pour the batter into a buttered 9-inch pie plate. Sprinkle the berries on top. Bake at 350 degrees for 45 minutes. Sprinkle with powdered sugar before serving.

  1. Carol - can you make something I can pronounce??? ;)
I remember this - looks great..

  2. Oh, that is nice!! Can I make it with canned fruit?
    Okay, don't yell, I'll use frozen. :)

  3. I love clafoutis. Your recipes looks easy. I will give it a try.

  4. I'll have to remember to make that this summer!

  5. This is a great summer dish! I love clafoutis, buckles, bettys etc. Such fun and so good with fresh fruit with a big scoop of ice cream on top!

  6. Mimi is glad it is not chicken! LOL
Looks very good! Even for a non flashback Friday!

  7. Great flash back...sorry I'm such a slacker. I think I need to unadvertise Flashback Friday :-)

  8. I've been wanting to try this one and your blueberry version looks as good as Jaynes!

  9. I just used up the last of my blueberries (frozen from last summer) in a sauce, of all things. Never even thought to make Clafouti.

You know my friend, for someone who does not bake often, you hit this one out of the ballpark!

  10. Thanks for the reminder, Carol. I still have berries frozen from last summer. I need to use them up, so this is a good place to start.

  11. I have blueberries in the freezer too - great idea to use them this way. Great flashback from Jayne!
