Has to be one of my most favorite foods in the whole wide world! Stuffed Mushrooms!
I usually have some sad, old tomatoes left, just one or two, getting a little soft. So I roast them. A little olive oil, some garlic, salt and pepper. It's saved from being thrown out and wasted. This time I put the roasted tomatoes inside the mushrooms and sprinkled a bit of Parmesan on top! A drizzle of olive oil, a drop of white wine, and a dab of butter in the pan and baked them. Delicious. Nice change from the breadcrumbs.
