Tuna with Ginger-Chile Marinade

Not a fish family here. But we're trying. The pickiest won't even go near it, her loss because this was so good, it could sway a somewhat picky eater. Just not the pickiest. So three out of four is not bad. The Griller grilled, and he grilled and he grilled and it was a little dry, but I didn't have to do anything but the marinade so I am not complaining. Not too much anyway. So he'll never eat sushi. You get used to dry fish, it has a lot of flavor. The marinade was a hit, we'll make it again, maybe next time I will give him a timer.




Tuna with Ginger-Chile Marinade

4 tablespoons unseasoned rice vinegar
2 tablespoons finely grated peeled fresh ginger, more or less, to taste
3 tablespoons peanut oil
4 tablespoons Asian sesame oil
3 tablespoons soy sauce
3 tablespoons honey
tablespoon chopped fresh cilantro, more or less to taste
1 jalapeno or serrano chile, seeded, minced
salt and freshly ground pepper
4 1 1/4 -inch-thick tuna steaks
1 large red bell pepper, cut into thick slices, length-wise
1 poblano pepper, cut in slices, length-wise
1 large sweet onion (such as Maui or Vidalia), cut into thick slices

Put the vinegar, oils, ginger, soy sauce, chile, and cilantro in a jar, close the lid, and shake vigorously to combine; season to taste with salt and pepper.  Add tuna to a ziploc bag and pour some of the marinade from the jar, reserving some of the marinade to serve. Zip the bag closed and shake to cover tuna with marinade. Refrigerate at least 30 minutes and up to 45 minutes.

Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Grill tuna, peppers, onions to desired doneness, turning frequently, about 4 minutes total for medium-rare. Transfer to platter. Drizzle reserved marinade over; sprinkle with chopped cilantro.

  1. Your marinade sounds really lovely: salty, sweet, spicy and tangy... I can imagine it combined really well with your tuna! Good for you that the slightly picky eater thought it was good enough to try! Ah and the really picky eaters out there... you can only do your best :)
    (I heart asparagus btw, can't wait for the season to start, because right now they're still quite expensive)

    I like grilled fish, and your marinade sounds yummy! Will put this in my file for summer grilling season.

  3. I like the idea of ginger and chile. We are eating a lot more fish these days, and a new marinade is welcome. I like the idea that there isn't a lot of extra salt, and I'd use low-sodium soy sauce.

  10. That sounds wonderful. With good tuna, we've tried just searing the outside. But we may be a bit farther along in fish appreciation. Well, DH is a lot farther along and he's slowly dragging me there!

  11. We are not fish eaters as well. On the contrary Mr. Picky eats a lot of fish. My mom makes it for him lol. This one is very tempting though. I like cooking fish in less ordinary way and this fits exactly that. It looks mouthwatering!

  15. We brought tuna back from Mexico. This looks like an awesome marinade to try. I just heard a chef on the radio talk about grilling tuna. He suggested a very short grilling time and then wrapping it in foil to finish, so as to not overcook. It's so hard to decide when it's done and not overdone.

  18. I love most fish; but I haven't had a great experience with grilled tuna before. I do like a spicy tuna roll though. With this marinade, I would definitely give grilled tuna another go around. This would be delicious on salmon too, I'm sure. The whole plate looks beautiful! Great recipe, Carol! Thanks!

  19. Yum...I have a hard time understanding people that don't like fish...like my mother...she would cook it but not eat it. Her idea of fish was canned tuna once in awhile! Me...I would much rather eat fish than meat any day of the week, so I am always looking for new ways to prepare it.

  22. I am sure that once your daughter sees how much everyone is enjoying her curiosity will give way...maybe? The ginger sauce sounds great so maybe she will eat it on pork or chicken. Either way the meal looks wonderful.

    p.s. Tell the griller he is wanted on the phone next time and sneak and take the steaks off the grill...
