Mini Chicken Pot Pies

So I cheated in the kitchen. When my friend Debbie from Mountain Breaths gave the heads up that Williams-Sonoma was having a sale on the Breville Mini Pie Maker I jumped right away and ordered one. I'm a sucker for kitchen stuff! But I am a little baking challenged.  So I took the easy way out. Store-bought dough. Soup from a can. I know. I know. That was practice. Next time from scratch. But these mini pies were a big hit anyway.

Took a couple months to finally have a moment to use it and I am so glad I did. First time around was mini chicken pot pies. I need a little more practice, this one needed more filling so the top would have browned better. My son ate the one that was somewhat picture perfect. And it must have tasted as good as it looked because he wanted a second. And some to take to work tomorrow.







This is a basic recipe. Instead of pie shells in the tins, I used store bought pie crusts that are rolled. Two pie crusts per box, made about 6 mini pies, if you re-roll out the scraps. Next time I will try homemade dough. Hopefully. But this worked out fine.


Really Easy Chicken Pot Pie

2 (9 inch) deep dish frozen pie crust shells, thawed (or not!)

10-oz frozen mixed vegetables
2 cups cooked, diced chicken breast
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup milk
8 cremini mushrooms, sliced thin
1 potato, diced and par-boiled

Preheat oven to 350 degrees F.

In a bowl combine the mixed vegetables, mushrooms, chicken, cream of chicken soup and milk. Pour mixture into one of the pie crusts. Turn the other crust over and pop out of the tin onto the top of the filled pie. Poke a small hole in top crust.

Bake for 30 minutes or until crust is golden brown.

  2. You make my mouth water Carol! I haven't had a chicken pot pie in ages and I love them so. Your little pies are adorable and look delicious. And there's nothing wrong with easy sometimes. As moms, we just have to get dinner on and moving sometimes and your pies look amazing so the short cuts must have worked just fine.

  6. Yay, you used the pie maker! I am loving mine, and I truly adore mini pies. I'm glad we got it for $100 off. The first pies I made were mini cherry pies and my new favorite is rhubarb. Just made some rhubarb filling tonight, and am baking more pies. I'm going to use your recipe to make chicken pot pies next week. Yum!

  15. I've been kicking myself that I didn't buy this when it was on sale. Every time I see a post about the wonderful little pies it makes I become more determined to get it. I'll watch for another sale but if one doesn't come along before long I'm going to crack and buy it anyway.

  40. I saw one of these in the W&S store in Lynnwood WA a couple of weeks ago. I wish I'd bought it, after reading your post. We don't have W&S here, and I believe that shipping costs are prohibitive....but next time I'm down in WA I think I'll have another look. These little pies would make great lunch or weekend fare.
