Roasted Heirloom Tomato Soup
This is definitely worth a repost, especially since we're coming into tomato season! Heirloom tomatoes. The different colored tomatoes gives the soup a really deep color and a great taste. You can use any tomatoes you like. Plain supermarket tomatoes are delicious in this soup as well. The roasting really brings out the flavor. I'm lucky that some of the markets around here carries heirlooms. I used a mix of those and vine tomatoes from the supermarket. Would have had home grown eventually but the big kid brought home a mutt from a shelter last year that we all fell in love with and assumed he was part rottweiler and part lab like his papers said. Not a great assumption because he looks part Great Dane with real long legs and a big head. And everything is within reach of his humongous appetite. So much for home grown. There's always next year!

Roasted Tomato Soup topped with Greek yogurt instead of cream, croutons
and chopped chives. A drizzle of oil and it's good to go.
Roasted Tomato Soup

http://www.foodnetwork.com/recipes/tyler-florence/roasted-tomato-soup-recipe/index.html Printable Recipe 3 pounds fresh tomatoes (mix of any kind you like, heirlooms are great) 6 cloves garlic, peeled 1 large onion, sliced 1/2 cup extra-virgin olive oil salt and freshly ground black pepper 1 1/2 quarts chicken stock 2 bay leaves 4 tablespoons butter plain fat-free Greek yogurt (optional) chopped chives or basil (optional) olive oil (optional) croutons (optional) Preheat oven to 350 degrees F. Wash, core and cut the tomatoes into halves. Spread the tomatoes, garlic cloves and onions onto a baking tray. If using vine cherry tomatoes for garnish, add them as well, leaving them whole and on the vine. Drizzle with 1/2 cup of olive oil and season with salt and pepper. Roast for 45 - 60 minutes, or until caramelized. Remove roasted tomatoes, garlic and onion from the oven and transfer to a large stock pot (set aside the roasted vine tomatoes for later). Add 3/4 of the chicken stock, bay leaves, and butter. Bring to a boil, reduce heat and simmer for 15 to 20 minutes or until liquid has reduced by a third. Use an immersion blender to puree the soup until smooth. Return soup to low heat and adjust consistency with remaining chicken stock, if necessary. Season to taste with salt and freshly ground black pepper.Top with a dollop of Greek yogurt and a sprinkle of chopped chives. Top with croutons, drizzle with a bit of olive and serve. |

Blizzard Sunday for Mosaic Monday!
Here on Long Island, Sunday morning, we woke up to a Winter Wonderland! Joining Mary from the Little Red House for another fun Mosaic Monday! Check out the Little Red House for more mosaics!
These pictures were taken during the evening and what we woke up to on Long Island! A forecast of two inches on Long Island causes panic and the grocery stores to be empty of all essentials. Imagine a blizzard?
We all have our own essentials during a snow emergency. Mine just happens to be Hot Chocolate and cookies! To each his own. My friend was in a store before a hurricane one time and stocking up, her cart was filled with wine, cheese and crackers and someone said, "hey lady, aren't you getting emergency supplies?" and she said "these are my emergency supplies!"
My husband and my son have a long morning of clearing us out. I would help, of course, but someone has to make breakfast! Waiting for them will be a big plate of scrambled eggs, pancakes, bacon and hot chocolate!
Lots of fun in a foot or two of snow...
Not so much fun in a foot or two of snow...
and he's had enough for one day...
and in the end, a steaming cup of hot chocolate for those who brave the snow and clear a path...
Hot Chocolate

4 cups milk (1 quart)
10 ounces semisweet or milk chocolate, cut into small pieces
Whipped cream, for serving (optional)
Chocolate shavings (optional)
Optional: You can also add a cinnamon stick, 6 sprigs fresh mint, or 2 split vanilla bean. Or use a candy cane in the cup as a stirrer!
Heat the milk to scalding in a medium saucepan. Add cinnamon, mint, or vanilla, if using. Let steep 10 minutes. Remove saucepan from heat; strain, and return to saucepan. Reheat milk; using a whisk, stir in chocolate until melted and milk is frothy. Serve immediately with a dollop of whipped cream garnished with chocolate shavings.

1 quart (4 cups) milk
1 cup (6 ounces) semisweet chocolate chips
1 tablespoon vanilla extract
Pinch of salt
Whipped cream, for serving (optional)
Place cocoa powder in a medium saucepan. Stir in milk, a bit at a time until cocoa mixes in with the milk and isn't clumping; add remainder. Stir. Add chocolate chips; melt over medium heat, stirring occasionally.
Bring to a boil, stirring occasionally. Remove from heat; stir in vanilla and salt. Ladle into mugs with whipped cream, if desired.

Mosaic Monday! And puppy makes three!
My son left with his friends yesterday afternoon to buy a pair of new sneakers. He came home with Max. Not Air Max, Air Jordan or anything else that resembled a sneaker. He came home with a Beagle puppy. Surprise! Shock would be a good word.
He called first to say he "accidentally" went into the Pet store. and just couldn't leave this puppy behind. I told him to get out of that store as fast as he could. He wasn't listening. He said "a cute Beagle puppy," I said "NO" and then somehow those words came out, the subtle, little signal that in his mind was the go ahead, "A Beagle? I love Beagles!" But "no, no, NO, we can't have another dog here. Get out of that store NOW!" He said fine. and somehow I knew that he was not driving home with just a couple of friends, he was bringing home a permanent guest. Dad wouldn't be very happy. He wasn't very happy the other three times we surprised him! At least not at first!
Guess who's staying?
So meet Max. Max Marvin. It just had a ring to it. I think.
