Pizza!

Homemade pizza is so easy, even if you aren't the greatest baker. I use a really easy recipe for the dough that I played around with when I used to be a baking counselor at summer camp. We baked pizza with the kids. Funny, there was more flour on the kids than in the pizza! The crazy thing is, they had me baking with the kids, and I can't really bake. But even I couldn't screw it up. Much :) Finally got it right and now I make homemade for my family any time they want it. Sometimes if I'm really in lazy mode, we just get the dough from the pizza place. And if something comes up and you can't get to it, the dough freezes perfectly fine to use another time.

So today we decided on two kinds, but since everyone is picky when it comes to pizza, we all get a section. One is basic, a tomato, mozzarella and ricotta! With a little Parmesan sprinkled in with the mozzarella. The other is the picky pizza. Some like onions, some like peppers, some no onions, no peppers! So one got half pepper, half onion and everybody here likes mushrooms!

This is a basic recipe adapted from many on the internet!
3 cups flour
1 active dry yeast
1/4 teaspoon salt
1 cup warm water
2 tablespoons oil

For dough, beat together on low speed or by hand, half of the flour, the yeast, salt, warm water, and oil for 30 seconds, scraping bowl constantly. Then beat on high for another 3 minutes. Turn out the dough on a clean, floured surface. Gradually add the rest of the flour and knead dough for about 7 minutes until elastic. Place the dough in a bowl, cover, and let rise for 45 minutes.

  2. We had pizza last night. One a store bought dough and one my own dough. Store bought had a nice chewy bite but mine rose with big golden brown bubbles on the edge which we loved. One with just sauce, cheese and bacon, mine with sauce, cheese, ham and pineapple tidbits :) Had to freeze the leftovers before I ate the whole pie.

    Ever have the 'Sporkie' pizza at Bertucchi's? It has ricotta cheese and is delicious!

  4. I am incompetent when it comes to making pizza dough. I admit it, I purchase it from the bakery of my local supermarket (sigh).

  6. Whoa...now my mouth is watering. I love making pizza's here at home. I am working on mastering a potato pizza. One of our favorite pizza shops has an amazing one with garlic oil spread on the crust with roasted pine nuts and garlic and super thin sliced potatoes that brown up so wonderfully when it is cooked...just the right amount of crusty edges to them. MMMMMMMmmmmmm....I might need to put pizza on the menu for the week.

  11. We love all kinds of pizza but the plain Margarita style with fresh tomato suace, mozzarella and basil will always be #1. I also lobe roasted mushrooms toppings and anchovies :)

    How did you make those cute circle photos?

    A week in Australia wasn't enough -- I'd love to go back one day to see more!

  21. Making my own pizza is something I do from time to time. I like artichokes, pesto, spinach, chicken, mushrooms and cheese on mine. My husband calls it girlie pizza - he likes the pepperoni/sausage variety.

  22. Well, I hope you brought enough for everyone.

    Believe it or not, I made pizza last night, one for the guys, one for me. The 'men' prefer the typical meaty toppings, whereas I lean toward the first one you posted—fresh tomatoes, and barely enough cheese to satisfy a tiny mouse.
    I had one slice left this morning, and, well, that was breakfast.

    Still, I could easily go for a bite of your vegetable pizza.

  28. I've never heard of ricotta on a pizza... they all look fantastic!! Give me canadian bacon, mushrooms and onion!!!! (a little green pepper thrown in...)
