I love all the new colors in food. It seems to be the new rage. Yellow watermelon, purple and yellow carrots, yellow beets, white asparagus. Love them all.
I agree with folks who say these potatoes would look best in a potato salad or some other cold dish. Minnesota Vikings fans might like them any way possible!
How beautiful!!! I've never tried purple potatoes before but they're so beautiful that I want to make some! I'll keep my eyes out for some at the grocery store. :)
They are really pretty, and would be nice to have all different colors in potato salad, but I tried them once and I think one was bad and has kind of put me off trying them again.
Love the color! My older son refuses to eat potatoes now because I used to hide his veggies inside them. He might actually eat purple potatoes, though!

Beautiful purple! There's a restaurant that we like that makes mashed potatoes out of them in the winter. I have to tell you, depending on how they are piped, they are not the most appetizing sight - LOL.
Don't you love that regal purple-y color? They taste just like a regular potato. The flesh turns almost black when roasted, but I refuse to be intimidated by a spud, no matter what the color :)

The color on those potatoes is quite deep! I didn't realize purple potatoes were quite that purple.

ReplyDelete@ William, they taste like a yukon gold to me anyway! No more than a bag of baby yukon golds or fingerlings I usually buy to roast.
ReplyDeleteSeemed like a nice change. They do lose a lot of that deep purple color when you roast them. Be nice in a potato salad as Ocean Breezes said!
