Frozen Cocktails
A frozen chocolate cocktail.
When I saw it at ValSoCal I knew I would be making this for New Year's Eve. I need more practice with the sugar on the glass but otherwise these were a big hit! I added a little chocolate syrup to make it more chocolatey, some silver sugar to make it a little more festive and it was a delicious way to celebrate the New Year!
Frozen Hot Cocoa Cocktail

4 ounces of hot cocoa mix
3 cups of milk
3/4 cup vanilla vodka
4 to 5 cups ice
chocolate syrup, for garnish
chocolate syrup, for garnish
mini marshmallows, for garnish
chocolate shavings, for garnish
sugar, for the rim
hot cocoa mix, for the rim
sugar, for the rim
hot cocoa mix, for the rim
Put some water into a saucer. Dip the rims of the martini glasses into the water and shake off any excess. Dip them in the sugar to rim the glass. You can also rim the glass in hot cocoa instead of the sugar.
In a blender, combine cocoa mix, milk, vodka and 6 cups of ice and blend until smooth. Serve in martini glasses and garnish with the mini marshmallows, chocolate syrup and some chocolate shavings!

The Winter White Event!
Perfect timing! Long Island got the white stuff just in time for Kathleen's Winter White White Event! How did she manage that?
I am joining Kathleen at Cuisine Kathleen for her annual Winter White Event! I don't really do tables, we eat at them, yes, but I don't dress them up too well :) I'm more everyday dishes and sometimes even disposable! Kathleen is friends with me anyway! I like thick heavy paper napkins. I'm all about getting away with whatever is easy! I have kids, they like sauce and they like ketchup. My linens have seen better days! Although most of my dishes and accessories are white, so I could fit right in with Kathleen's theme! But since I walk to the beat of a different drum, instead of a tablesetting, I am joining in with a nice mug of WHITE Hot Chocolate!
but nah! I'll stick with the White Hot Chocolate! A gift from another very dear friend, and I loved it so much, I wanted more, so I found a recipe online at Martha Stewart! Love the White Hot Chocolate, nice change from Chocolate Hot Chocolate. That was a great surprise!
White Hot Chocolate

Makes 8 cups
2 ounces milk chocolate, for garnish
12 ounces good-quality white chocolate, coarsely chopped
6 cups whole milk
2 cups heavy cream
1 teaspoon pure vanilla extract
Peppermint sticks, for garnish
Whipped cream, for garnish
Using a vegetable peeler, shave milk chocolate into curls; set aside.
Place white chocolate in a medium heat-proof bowl; set aside. Place milk and cream in a medium saucepan set over medium heat until bubbles begin to form around edges of pan, about 4 minutes. Immediately pour mixture over white chocolate. When chocolate begins to melt, stir to combine. Whisk in vanilla. Continue whisking until a light foam forms. **Instead of using a bowl I just added the white chocolate to the pot, off heat, and whisked it in! One less bowl to clean!
Serve immediately garnished with peppermint sticks, whipped cream, and chocolate curls.

Chocolate! Cakes and Strawberries
Spent the other day with Miss Picky in the kitchen. She was debating what we should bake. We don't usually agree. I was shooting for quick and easy. She wanted long and involved. It would definitely have to be something with chocolate. She found some strawberries, buried way back in the frig, barely surviving, those poor things. But they could be saved and be absolutely delicious dipped in chocolate. We weren't serving them to company, it was our treat! That worked for both of us, she got chocolate, and I got quick and easy, minimal clean up! She threw a wrench into the plans by looking in the pantry and digging out a quick bread mix from Williams-Sonoma that looked like something we had to have last time we were there. Chocolate-Peanut Butter Quick bread. It was the QUICK in the title that got me on that one! OK, I'm a good sport. Most of the time anyway! and so began our time in the kitchen. Me and Miss Text Everyone while we bake, mix and melt!
Chocolate Covered Strawberries

16 ounces milk or bittersweet chocolate chips (white chocolate or nay other kind of chips)
2 tablespoons vegetable oil (optional, it gives it a smoother texture, but you don't need it)
pound fresh strawberries with leaves
Line a baking sheet or cookie pan with parchment or waxed paper.
Wash the strawberries and pat them dry with paper towels; set aside. NOTE: Make sure the strawberries are completely dry. Any drop of water in the melted chocolate can cause it to "seize" and turn the chocolate mixture into a grainy mess.
In a microwave-safe bowl, melt chocolate chips (and vegetable oil, if using) in the microwave for one minute. Check and stir. If it needs more time, put it in for 30 second bursts, checking and stirring, it doesn't have to be completely melted, you don't want to scorch the chocolate. Remove the container from the microwave and stir the chocolate until completely melted.
Grasp the stem or green leafy part of the strawberry and dip into the chocolate and swirl in chocolate to partially cover.
Give the strawberry a little shake as you take it out of the chocolate, let the excess drip off into the bowl, and then place the dipped berry on the cookie sheet lined with parchment. Repeat with the rest of the strawberries.
Set aside the berries to allow the chocolate to harden, about 30 minutes. Or you can place them in the refrigerator. Transfer fruit onto a serving platter to serve.
Although we had one vote for bittersweet and one for milk chocolate, milk chocolate won. Strawberries dipped in any kind of chocolate is a winning combination!
Just add melted butter and eggs. It says QUICK right there.
Instead of making a loaf we decided to put the mini bundt pans to good use. and a couple mini tart pans, too! We dusted the pans with cocoa powder instead of flour.
So with mini bundt's or bundt pans in general, the bottom of the pan is really the top of the cake, right? We followed directions, didn't over fill, not too much anyway and the bottom (or top?) or whatever kind of got rounded instead of flat. The mini tart pan cake definitely wasn't sitting pretty in the plate as you can see! The bundt was not too bad when you turned it over. See all the peanut butter chips? Delicious! Even topsy-turvy!
In the end, the bundt's came out nice! A little sprinkle of powdered sugar and all was well with the cakes!

Blizzard Sunday for Mosaic Monday!
Here on Long Island, Sunday morning, we woke up to a Winter Wonderland! Joining Mary from the Little Red House for another fun Mosaic Monday! Check out the Little Red House for more mosaics!
These pictures were taken during the evening and what we woke up to on Long Island! A forecast of two inches on Long Island causes panic and the grocery stores to be empty of all essentials. Imagine a blizzard?
We all have our own essentials during a snow emergency. Mine just happens to be Hot Chocolate and cookies! To each his own. My friend was in a store before a hurricane one time and stocking up, her cart was filled with wine, cheese and crackers and someone said, "hey lady, aren't you getting emergency supplies?" and she said "these are my emergency supplies!"
My husband and my son have a long morning of clearing us out. I would help, of course, but someone has to make breakfast! Waiting for them will be a big plate of scrambled eggs, pancakes, bacon and hot chocolate!
Lots of fun in a foot or two of snow...
Not so much fun in a foot or two of snow...
and he's had enough for one day...
and in the end, a steaming cup of hot chocolate for those who brave the snow and clear a path...
Hot Chocolate

10 ounces semisweet or milk chocolate, cut into small pieces
Whipped cream, for serving (optional)
Chocolate shavings (optional)
Optional: You can also add a cinnamon stick, 6 sprigs fresh mint, or 2 split vanilla bean. Or use a candy cane in the cup as a stirrer!
Heat the milk to scalding in a medium saucepan. Add cinnamon, mint, or vanilla, if using. Let steep 10 minutes. Remove saucepan from heat; strain, and return to saucepan. Reheat milk; using a whisk, stir in chocolate until melted and milk is frothy. Serve immediately with a dollop of whipped cream garnished with chocolate shavings.

Bring to a boil, stirring occasionally. Remove from heat; stir in vanilla and salt. Ladle into mugs with whipped cream, if desired.
