Cinnamon Bun Pancakes. Crazy Good.

It's been a long, long time since I made a really good Sunday Breakfast. So when the big kid asked, I couldn't refuse. I saw these pancakes over at Kitty's Kozy Kitchen except Kitty's were pumpkin. And they looked amazing! I didn't have pumpkin so I checked out the link for Recipe Girl's original recipe. My guys like a big breakfast so I doubled the recipe. Made just enough.
My husband had one bite and said they were "crazy good!"
And he was eating the practice ones that came first!

They really did taste like Cinnamon Buns!



Cinnamon Bun Pancakes

FILLING:
1/2 stick (4 tablespoons) unsalted butter, just melted
1/4 cup + 2 tablespoons packed light brown sugar
1/2 tablespoon ground cinnamon

GLAZE:
4 tablespoons unsalted butter
2-ounces cream cheese, at room temperature
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

PANCAKES:
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
2 cups milk
2 large eggs, lightly beaten
2 tablespoons canola or vegetable oil

Preheat an oven to warm setting.

PREPARE THE FILLING: Stir together the butter, brown sugar and cinnamon. Pour the filling into a quart-sized heavy zip baggie and set it aside to set. It should be thick. It may separate, just stir it again. Put it in the refrigerator for a few minutes after stirring. When it's ready to use cut just a small tip of the corner off the baggie.

PREPARE THE GLAZE: In a small pan, heat the butter over low heat until melted. Turn off the heat and whisk in the cream cheese until it is almost smooth. Sift the powdered sugar into the pan, stir and add in vanilla extract. Set the pan aside while you make the pancakes.

PREPARE THE BATTER: In a bowl, whisk together the flour, baking powder and salt. Whisk in the milk, egg and oil, don't stir too much, a few small lumps are okay.

COOK THE PANCAKES: Heat a large, nonstick skillet over medium and spray with nonstick spray or wipe with a little butter. Use a measuring cup or a ladle to about a 1/4 cup of batter to the pan. When your pancake begins to form bubbles, add the filling. Take the baggie of cinnamon filling and squeeze it to get the filling into the snipped corner. Starting at the center of the pancake, squeeze the filling on top of the pancake batter in a circular swirl. Cook the pancake until the bubbles start to pop on top of the pancake and it's golden brown on the bottom edges. Slide a thin, wide spatula underneath the pancake and quickly but gently flip it over. Cook until the other side is golden as well, about 2-3 minutes. Transfer cooked pancakes to a baking sheet and place it in the oven to keep warm. Wipe out the pan with a paper towel, and repeat with the remaining pancake batter and cinnamon filling. Proceed with the rest of the batter until you’re done. Re-warm the glaze briefly, if it gets too thick.Top each stack with a drizzle of cream cheese icing and serve.

Mosaic Monday: Log Cabin? Are you kidding?




To me it's not really Spring until I get that first scent of lilacs! It's spring here for sure!


It was a beautiful Saturday here on Long Island yesterday, and today we have one of those rainy all day kind of days! So what better to way to end the weekend than with a nice big brunch! Yesterday was a beautiful day for lilacs and gardens. Today is a lazy Sunday, so we were in no rush, we all sat down to a really nice, very late breakfast! Shortcuts involved for sure, but still it was brunch, and it was good. and I found something out about the Griller today!

He came clean after all these years! Can't believe it. I mean we do eat our share of junk food and sweets. I like pre-prepared foods as much as the next guy. Ravioli in a can. Fine. Love it. Mac-n-cheese from a box, the best! Even mashed potatoes that are powdered. Not a problem here. But sugary sweet, no "maple" flavor pancake syrup versus REAL GRADE B Maple syrup? I like both but prefer Grade B syrup. He never expressed a preference. Go know? What a surprise that was! Next he's going to tell me he prefers his mother's brisket over mine?


 


By the way, those pancakes? From a container. Shake and Pour. They're ok. Better than the canned pancakes! but definitely not as good as the box. Remember that canned stuff? We like the box mix so much better. Much, much better!  We like scratch but sometimes it's ok by me to just grab the mix! No mess, no fuss. I'm all for convenience! and kitchen gadgets!




See what I got from Williams-Sonoma? A pancake pen. If you make lots of pancakes, this is a great kitchen toy! No drips like with a spoon or a ladle! I really liked this thing!


Basic Pancakes

Printable Recipe

1 egg
1 cup all-purpose flour
3/4 -1 cup milk (more or less to desired consistency)
2 tablespoons unsalted butter (melted) or vegetable oil
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
vegetable oil for the pan

Preheat the oven to 200 degrees F.

Mix your dry ingredients together, then add in your wet ingredients. Mix until it's all moistened, a few lumps are ok. Don't over mix.

Pour about a tablespoon of vegetable oil on a paper towel and wipe the inside of a large skillet or skillet with the oil, giving it a thin coating. Heat the large skillet or griddle on medium heat. Spoon about three tablespoons or so of batter into the skillet, you should be able to get about three pancakes in the pan, depending on size of the pan and size of the pancakes! When it’s bubbled up on one side, flip them over and cook the other side for another minute or two until that side has browned!

Transfer to a baking sheet; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. Serve warm, with whatever toppings you prefer.

Flashback Friday: Pumpkin Pancakes

 Joining Suzy at Kitchen Bouquet for another Flashback Friday! Suzy is on vacation from blogging for a bit until after the holidays but check out her blog and her flashback links!




I had found a really delicious recipe for Pumpkin Pancakes last year on the blog, DISHING UP! and I remember they were so good, I have to make these again! Perfect for a Sunday morning breakfast.

We haven't had big breakfasts in a while, not since most of our regular Sunday breakfasters graduated high school and went away to college. Son's friends. Big breakfasts have dwindled, except when they're all home for break! They're starting to arrive home in dribs and drabs for the holidays and I'm sure I'll be suckered into making a few Sunday breakfasts in the next few weeks! One time I got a note scotch taped to the alarm clock, said, me and the guys would greatly appreciate if you could make them all breakfast! Next morning six HUGE appetites were at the table waiting for breakfast! Still have that note!





These Pumpkin Pancakes were a hit. I topped them with Banana's sauteed in Maple Syrup!




Pumpkin Pancakes

Printable Recipe

2 cups flour
6 tablespoons brown sugar, packed
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon each ground ginger, nutmeg and cinnamon (I used more cinnamon)
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
2 cups buttermilk (shake well in the container, then measure)
1 cup canned pumpkin puree
3 large eggs, at room temperature
3 tablespoons melted butter, cooled
1 teaspoon vanilla extract

Mix dry ingredients together in a bowl. Mix wet ingredients together in another bowl. Add the wet to the dry and stir until mixed. Let stand about 10 minutes. Stir again, and using a 1/4 cup measure, drop into buttered pan over medium heat. Cook until edges dry out and bubbles start to form. Flip and cook until bottom is browned and pancakes are cooked through. Serve right away with butter and maple syrup, or keep in a warm oven if making a big batch.

Heat up some Maple Syrup, I like Grade B, and throw in some slice banana's, and a little bit of dark rum, add some pecans of you like. Saute it all together and serve with the Pumpkin Pancakes.

Mosaic Monday and convenience in a can...

ok, I went for it. I'm admitting it, I'm easily swayed by the words NEW or IMPROVED. Well, maybe not so much improved but definitely new. and when the Seattle Times Online Food Section came into my inbox with the headlines BATTER BLASTER, I had to check it out! I did love cheese in a can. I still do. This had to be pretty good. Or so I thought.






Here's the first attempt! Starting off, I pretty much stunk at pancakes in a can. but it gets better. A little.





















We're getting there. I finally figured it out, SHAKE THE CAN!

















There's always the good side and the not so good side of a pancake. Why is that?





Miss Picky saw the can and said "EWWWWWWWWWW!" right from the start! She may be right this time.


So here they are good side up! They were ok. No real mess, no mixing bowl, no spoon. We'll take the mess next time. Even Miss Picky likes pancakes from scratch. Or at least a mix! and by the way, the bacon...precooked for the microwave. What can I say, sometimes easy is ok. Just not from a can. Unless it's cheese!

I wonder if they'll decide to add different flavors. Blueberries from a pressurized aerosol can would probably be a little dangerous. At least in my kitchen!
