March came in like a lion...

but the good part is we had a snow day! but we also had to dig out from almost a foot of snow. This was in the morning. It snowed all night and we woke up to this. and it kept snowing all day long.



I knew there'd be no cooking on a snow day, all that snow, that's about my exercise for the year. So tonight is takeout! Amazing I still have the strength to type! Hot chocolate with marshmallows does wonders for the tired soul :)

Last night's dinner was good. Had to be, I had no excuse because we didn't do much of anything all weekend. Sometimes you a good weekend of nothing! For dinner we ended up with burgers pan fried with red onions and mushrooms, roasted cauliflower with tomatoes and shallots, and Cavatappi with Knorr Pesto Sauce. Not a big fan of pesto but I love the little packets. So maybe not authentic, it tastes great!

My new favorite creation...
a pan-fried cheeseburger with red onions, mushrooms and sauteed garlic spinach on a whole wheat sesame seed bun!




Cavatappi with Pesto Sauce



Roasted cauliflower with tomatoes and shallots.


Roasted Cauliflower

1 head of cauliflower (cut in small florets)
one package of small tomatoes (I used a handful of orange grape tomatoes and mini pearl tomatoes)
two shallots (sliced thin)
2 cloves garlic (minced)
3 tablespoons olive oil
salt and pepper to taste

Preheat oven to 475 degrees. On a rimmed baking sheet, toss cauliflower, tomatoes, shallots, and garlic with 3 tablespoons oil; season with salt and pepper. Roast until lightly browned and tender, 20 minutes, tossing once.


and a sweet ending to a good dinner, and a great beginning to celebrate March madness with my friend, Kathleen, who's already Marching on to a big St Patrick's Day party at her blog!




I know a few of us wait for the green Hostess Snowballs every year!

  1. Carol, your patio table looks like ours. March definitely came in like a lion. (Now that song is in my mind. We had to memorize it - "Spring is Busting Out All Over" in 6th grade music class."

    That is a gorgeous hamburger. I love any pasta and pesto. But the cauliflower recipe really has piqued my interest. I must try it.

    And you know my daughter's fondness for GREEN Snowballs.

  8. Carol, your outdoor table reminds me of a giant marshmallow. The fact that it's snow, makes me a bit crotchety.

    We haven't seen snow here in a while; it's sunny, but brrutally cold.

    Anyway, I love your new creation!

  12. Man that burger looks good. You really do make a balanced meal. I hardly ever have sides with my burgers.....except maybe chips or fries.
