Mosaic Monday! Chicken Mosaic.

Why did the chewing gum cross the road?

Because it was stuck to the chicken!


and no joke, if you like chicken, this is an easy, easy recipe. and so good! Use a lot of onions! It's all over the internet but I got it from my friend, Woodie, who got it from Ruthanna on the Cooking Forum. I use chicken parts, and take the skin off, and I use more than one onion.

Sherried Chicken

2 frying chickens (2 1/ 2 pounds each), halved
1/2 cup butter, softened
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 onion, minced
1/2 cup dry sherry
1/4 cup honey

Preheat the oven to 350 degrees. Spread the butter on the chicken and sprinkle with salt and pepper. Arrange the chicken in one layer in a roasting pan. Add the onion, cover, and bake for 45 minutes to an hour. Combine the sherry and honey in a small saucepan and bring to a boil over medium-high heat. Pour the sauce over the chicken and bake for 15 minutes more, uncovered, or until the chicken is tender. Serve with pan juices.

    I think we joined a party that wasn't happening today..I only noticed after I posted..Mary didn't put up a new mosaic this week! Oh well..

  2. Corny but cute!!! I have a 4.5 # fryer ready for tomorrow and didn't kow what to do with it for sure..perhaps this new recipe of yours..don't think I have sherry though, will have to look!!

  17. In all the years visiting the CF I never saw that recipe. How did that happen? Sounds intriguing. I'm gonna try it next week.

    A chicken and an egg are lying in bed. The chicken is leaning against the headboard smoking a cigarette with a satisfied smile on its face. The egg, looking a bit ticked off, grabs the sheet, rolls over and says ... Well, I guess we finally answered "THAT question!"
