We like plain basic egg salad, no add-ins, no pickles, no olives, no paprika, no anything! Just eggs, Hellman's mayo and some salt and pepper! but I do occasionally add sauteed mushrooms and caramelized onions to basic egg salad. and it's fantastic! I just didn't do it this time. This time is plain. On a mini pita. For lunch. Took less than fifteen minutes! Only one out of eight eggs was a lousy peel! and if you notice in the mosaic, no green ring around the yolk? Tried something new I had heard awhile back online somewhere. You bring the water to a rolling boil with the eggs in the pot, turn off the heat but leave the eggs on the burner, covered for 11 minutes. Fully cooked and no ring! I still need to work on peeling though!
Basic Egg Salad
Printable Recipe
8 hard-boiled eggs, peeled and chopped
salt and pepper, to taste
1/4 cup Hellman's mayonnaise (more or less depending how much you like mayo!)
In a medium bowl mix all ingredients. Add any optional ingredients you want... celery, dry mustard, dill, olives, relish, whatever you like, until well blended. Cover and chill.

ReplyDeleteAre you using 'old' eggs? Some people say that's the secret to easy peeling. I use old and somewhat-new. They both peel pretty easily. I cheat and use an egg cooker. It steams 'em.

ReplyDeleteOh yum! I love egg salad. I may have to try the onions and mushrooms. I can imagine its good and rich. If I was good, I would make some of this up and have it for lunch this week..but will I???? lol maybe?

ReplyDeleteOne of my favourite sandwiches is egg salad. I have always cooked my eggs that way but I cannot remember who told me to do it that way. Glad it worked for you.
ReplyDeleteI love egg salad too! One trick I have learned from my Ms Picky is to add a little vinegar in the boiling water, so it won;t crack and for easy peel!

ReplyDeleteI love egg salad, too. Your recipe for hard-cooked eggs calls for a little shorter time with no heat. I'm going to try it to see if it solves the green ring problem that a longer time creates. Your hard-cooked eggs are beautiful! (Ok - I know I'm a dork when I say that).

ReplyDeleteI cook and my eggs the same way and they always come out perfectly. The ones that are hard to peel are the freshest! We use Hellman's up north but Duke's down south.

We always make egg salad at the beach for some strange reason. I put crumbled bacon in mine! Great mosaic and I love the picture of the egg---sometimes I just can't get it right!! SO frustrating! I've heard if the eggs are really fresh, it makes them harder to peel. That's my story and I'm sticking to it :)

ReplyDeleteI loved the partially peeled egg and chicken joke! I have found one method that works for easy peeling and that's to plunge the just-boiled eggs into an ice-water bath. Try it and report back :)
