Stuffed...

Allergies stink. My whole life I ate lobster, shrimp, clams, everything. No worries. Until one day, a few years ago. Baked clams. Couple hives. No big deal. Must have touched something. Never gave it a second thought. Weeks later, a bucket of steamers. More hives. More Benadryl. A few weeks after that the fish store was having a sale on steamed lobsters. Yum! Covered, head to toe, hives. Get a marker and play connect the dot. So many hives!  Doctor said allergies. Zyrtec did the trick. and I haven't had shellfish since. So I make do. Crab cakes out of fake crab. Calamari every which way. But I never prepared calamari myself, only had it out. Or ordered in. usually rings. and then I saw some not too disgusting looking squid. Really fresh, tentacles and all. and I thought I could try this. I would also be the only one eating it, except for the big kid. He's somewhat adventurous when it comes to food. Miss Picky was not home. Much easier to be adventurous when she is at a friend's house.

Always rushing, always short on time, I just threw this one together, no recipe. A little chopped tomato, some garlic, salt and pepper, and dried bread crumbs. A little dot of butter. Mushed all that together and stuffed it in the squid. Put them in a small disposable foil pan, also dotted with a bit of butter, a little olive oil and sprinkled some more bread crumbs on top. Baked it for more than ten minutes but less than 30, can't remember, I think I just lucked out and didn't over cook it, because I was also trying to get some salmon ready, too!




Have to figure out a way to make calamari taste like spaghetti and white clam sauce. I bet I could. or close. or maybe still good.

  3. I have had squid cooked in its own ink...not bad, actually! I could live without all the rest...but crab...oh dear! Sorry about your allergies! Enjoy your weekend!...hugs...Debbie

  4. Oh gosh I'd hate to become allergic to shellfish! I feel your pain. I love to cook stuffed calamari in tomato sauce. I cut up and lot of the small ones and throw them in too. The sauce is fabulous over linguini, sprinkle on hot pepper flakes...yum!

  5. I love calamari but usually have it deep fried as an appetizer when we're out for dinner. I've never tried making it at home either but it sounds wonderful with the stuffing!

    I think I could live without clams but not being able to have shrimp would be a bummer.

  6. It has to be horrible to be allergic to shellfish. I could get along with the squid or octopus, even the tiniest...too much like chewing on elastic bands!

  8. Your calamari looks great. I love the stuff and eat it every chance I get. I remember a wedding reception I went to that had all you can eat fried calamari appetizers before dinner...OY I ate a LOT! They just kept bringing more platters to the table. Bummer about the shellfish though. I'd be pretty upset myself.

  9. You and me both! I was allergic to shellfish, but I overcome in the long run. I love squid, too, and yours look delicious even uncovered.

    And I just had calamari (deep fried) for lunch at our meeting today.

    I hope your allergies will go away! Sigh.

  10. I can imagine the allergy delima, For me its trying to figure out what the course is, it could even be something like air freshner or smell of paint to trigger an allergy.

  12. If you live in the boonies like I do you wouldn't have an opportunity to buy squid so I don't think I'll be copying this recipe :) Glad to hear you have found seafood that you are not allergic too!
