And yet another soup!

It's cold, it's snowy, and it's definitely time for more soup! What better after digging out than a steaming bowl of French Onion Soup with crusty white bread and topped with melted mozzarella?

2 tablespoons butter
2 tablespoons extra virgin olive oil
5 large yellow onions, sliced thin
1 1/4 cups dry white wine, dry sherry, vermouth, cognac or brandy
1 32-ounce box beef broth (or 2 14-ounce cans)
1 32-ounce box chicken broth (or 2 14-ounce cans)
salt and freshly ground pepper, to taste
1/2 teaspoon dried thyme leaves
slices of Swiss cheese, fontina, mozzarella, provolone, muenster or whatever
1 loaf French or any crusty bread, sliced (and toasted in the oven with the cheese melted on top, if you like)

Melt the butter and oil in large skillet over medium-high heat.  Add onions, cook and stir for about 20 minutes, or until onions are very soft and browned, add the wine or sherry to deglaze the pan. Pour the onions into the soup pot with the broth, salt, pepper and thyme and bring to a boil. Lower heat and simmer for at least an hour or two, or longer for best flavor. Serve with bread dropped in and top with cheese. Or top the bread slices with cheese and toast in the oven until the cheese gets bubbly!

  4. When my husband came from a business trip in Paris I discovered that he found a new love. Her name was French onion soup. He kept talking about it days and days so much that I was obliged to cook this soup for the first time. When I tried it I realized why he was souch enthusiastic about it. Yours looks perfect.

  14. I am so into soup this week! I just made French Onion last night in the slow cooker. It was so good and so easy. Not sure I will ever do it stove top again. Your soup looks beautiful.
