Low Sodium Brownies?

yeah, well, they're only low sodium because I forgot to add the salt. I also forgot the vanilla. What can I say, it's just my style!  Non-focused. Thinking about too many things all at once. And baking is so not my thing! But my good friend, Renee, she said to look at it this way, I didn't forget to add the cocoa! Good point. It's a very chocolatey recipe. And to my taste, it didn't matter, they were dark, rich, chewy! I never noticed the missing salt or vanilla. The kids definitely didn't.

The recipe stressed NOT to overbake, but I knew I would because, one, I just tend to do that, and two,  because I like chewy, not gooey! So I overbaked a little. Just enough. The edges were the best! These are Katharine Hepburn's brownies. I'm sure there is a story or something to them, it's her family recipe. I got the recipe from Renee, who I am pretty sure is no relation to Katharine Hepburn, and she didn't tell me a story, but it's really a great recipe, so we'll just keep passing her recipe around! If you like gooey, then follow the rules. If you like chewy, then watch TV while the buzzers go off!

My picky one said she liked but didn't love them, and still managed to grab a second one! She laughed when I pointed that out. But I do know she prefers a less chocolatey brownie, more along the lines of the mixes. The big kid and his friend loved them. I'm making another batch right after I hit the publish button!

Our review? A KEEPER!
and by the way, they are even better from the freezer!





Katharine Hepburn's Brownies

Printable Recipe

1/2 cup cocoa (I used Dutch Processed Cocoa)
1 stick butter
2 eggs
1 cup sugar
1/4 cup flour
1 cup broken-up walnuts or pecans
1 teaspoon vanilla
pinch of salt

Preheat oven to 325 degrees.

Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes. Mix in eggs, one at a time. Add sugar, flour, nuts, vanilla and salt. Pour into a greased 8x8 square pan. Bake 40 minutes. ''Don't overbake!'' They should be gooey. Let cool (an essential step) and cut into bars.

*my note: I baked for a little longer, they were chewy, not gooey. I like them that way! If you like them gooey, then follow the directions and bake them for about 40 minutes or even less.

  5. Hi! Oh we are baking soul sisters, this so could be me!! I am always forgetting things or putting in the wrong amounts, etc. My new years goal is to read recipes better.

  13. I think Boris was in front of me at the register at the Walmart today-LOL. Your brownies look fantastic Carol, I will copy the recipe and make them soon! I was distracted in the kitchen today too, my Valentine's cupcakes have HOT PINK icing... gotta remember a little goes a long way with the gel colors!

  18. Ohhhh yummmm! I'm with you. I way prefer my brownies a little over cooked and chewie. SOOO yummie. BUT I'll have to wait to test it out as I just started the Flat Belly (with MUFA foods) Diet to lose a few pounds in a healthy and delish way. I don't think brownies would work for it though - I'd never be able to stop with one either. :) And very intriguing Kitchen Gadget - my grandchildren would highly approve! Have a lovely Valentine's Day!

  37. I love this recipe! I would bake them a little less though because I like them ooey and gooey. My mom would deem yours perfect though. :)
