Tomato Salad

A simple vinaigrette with supermarket tomatoes. 




Tomato-Onion Salad
adapted by There's Always Thyme to Cook
Printable Recipe

tomatoes, quartered
red onion, sliced
salt and pepper, to taste
fresh parsley, chopped

Basic Dressing:
approximate, it's all to taste!
1/4 cup white balsamic vinegar
1/4 cup olive oil (more or less to taste, we like more vinegar than oil)
salt and pepper to taste
1 teaspoon granulated garlic
salt and freshly ground pepper

Mix the dressing in a jar and shake to combine. Pour over the vegetables, chill in the fridge for a bit. Serve.

    I can;t too much tomatoes, but I insist all the time.

    Simply dressing makes the meal complete!

  13. I love simple but flavorful salads like this :) It's good to be reminded that we don't need a 100 ingredients to make a salad. I've never seen black tomatoes before, they look a bit intimidating... are they red gone ripe, or a different kind of tomato?

  20. I adore heirloom tomatoes. No more local ones until next summer, but sometimes they appear in the grocery store. You use a bit more vinegar than I do but I love balsamic. I'm not sure we can get white balsamic in our stores, but I'm going to look for it.

  22. I love heirlooms, too! But I don't think these are heirloom tomatoes. But I originally got them because I thought they were. They're called Kumato tomatoes. They have a nice shelf life, and they're pretty sweet, great flavor. Found them at Trader Joe's but my supermarket carries them as well.

    Do they taste exactly the same as red tomatoes? Or wait, what am I saying... there are so many types of red tomatoes LOL. Which variety would you compare them to?

  29. @ Gnoe, I have no clue what they'd compare to, but they are sweet and very firm, nice tomato flavor and a long shelf life. I think they may be a hothouse variety or something.

  41. I love it when I find those Kumato tomatoes at the store. Those and the on-the-vine tomatoes are the only varieties I'll buy. There is nothing as delicious as a simple tomato salad!
