April Fool's Flashback!

Joining Suzy from Kitchen Bouquet for another Flashback Friday!  
This time for April Fool's Day, I'm flashing back to Fushi! 

FAKE + SUSHI = FUSHI!

I must have made thousands of those treats over the years because for a long time I was a baking counselor in a day camp! So one year we decided to change it up a bit and make Fake Sushi, we called it Fushi. It's fun to make, fun to eat and it's really easy. Not to mention sticky. All you need is marshmallows, butter, Rice Krispies cereal, green fruit rollups or any color really, and some Twizzlers pull-n-peel candy, gummy worms, you can get as creative as you like. It's a fun, gooey mess, but the kids love it! And so did one or two adults :)

Printable Recipe

Makes 4 to 5 dozen

1/4 cup butter
4 cups mini marshmallows
6 cups crisped rice cereal
20 to 25 gummy worms (or Twizzler's Pull-n-Peel)
1 to 2 boxes fruit leather

Grease a 12- by 17-inch baking sheet. Melt butter in a 2-quart saucepan over medium heat. Add the marshmallows and stir until smooth.

Remove the mixture from the heat and stir in the rice cereal until it's evenly coated. Turn the baking sheet so that the shorter ends are at the top and bottom. Then press the marshmallow mixture onto the sheet, distributing it evenly.

Starting at one side an inch up from the lower edge, place gummy worms atop the mixture end to end in a horizontal line. Gently roll the lower edge of the marshmallow mixture over the gummy worms.

Then stop and cut the log away from the rest of the mixture. Use the same method to form 4 more logs. Slice each log into 1-inch-thick "sushi" rolls and wrap them individually with a strip of fruit leather. Garnish with julienne slices of dried apricots!

It's that season...


 Take some apples. Crisp, firm apples. These are Jonagold. I'm pretty sure anyway!



and in a short time you can turn them into Candy Apples and put a big smile on some kid's faces. It put a big smile on mine. I love candy apples. You're never too old!



Have to say I get very nervous working with a pot of molten sugar. Especially with dogs and children around. The kids were out all day, so this was a good day to surprise them, they love candy apples, so do I!

The dogs went outside in the yard. Just in case. Boiling sugar, really bubbling!  Really hot! Exercise extreme caution with this stuff!  I kept the pot in the sink while I dipped the apples, with a baking pan lined with parchment next to the sink. I had everything in place, didn't want any mishaps. I got through everything, except one small thing. One small little thing. After all the apples were done, I had only made four so there was still candy sugar left over in the pot, it spilled over into the sink. The sugar sort of glued the drain strainer thing closed. Figured hot water would melt it and I could get the drain opened. After I got done panicking because the sink was starting to fill up and that drainer thing wasn't budging. I used a measuring cup to get most of the water out, and tapped the drain thing with a hammer. It cracked the candy seal and then I needed a screwdriver to pry it up! That worked! I was way more worried about burning someone than anything else. A flood was all I needed next. But all's well that end's well!
  They couldn't have asked me to make cupcakes?




Let some of the excess drip back into the pot or you'll have a big puddle on the end of your apple. I only made four apples. No sticks in the house, so I used chopsticks left over from the sushi place. Worked great! I'll have to get more because next I see caramel apples in our future!

This makes about 6 apples

2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 teaspoon red food coloring, (optional)
or instead of food coloring, 1/2 cup of red hot cinnamon candies (optional)
6 medium apples
parchment paper

In a medium heavy-bottomed saucepan, combine sugar, 3/4 cup water, corn syrup, and food coloring OR red hots, if using. Bring to a boil over high heat; reduce heat to medium-high. Insert candy thermometer and continue to boil until temperature reaches between 300 degrees and 310 degrees (hard crack stage), about 20 minutes.

Meanwhile, remove stem from apples, insert a wooden stick into the top of each apple, pushing about halfway through; set aside. When mixture reaches temperature, immediately remove from heat. Working quickly, dip apples in sugar mixture until completely coated. Transfer to a baking sheet lined with parchment paper; allow to cool.

An April Fool's party...



We're having an April Fool's Party and you're all invited to have some Fushi...fake Sushi, Candy Sushi, call it whatever you want, it's a lot of fun to make, actually it's a pain, and kind of sticky, but the kids liked it! I made this recipe in a summer day camp I work at with tons of kids a few summers back. Fun project. Thought it would be a fun April Fool's so I made it again! My other choice was a birthday cake made from meat and potatoes over at marthastewart.com!

Of course I went with the candy!



From Family Fun online, Crispy Candy Sushi, but we just called it Fushi, or fake sushi :)

Instead of gummy candies, I used Twizzler peel n pull! and a microwave instead of the stove. The marshmallows puff up HUGE, so watch it. Usually done in three or four minutes and you have to stir it really well. I garnished the plate with chopped dried apricots.
