Celery Root

What to do with a celery root? It's not the greatest looking thing. It was a gift from a friend who went upstate and stopped at a Farmer's Market. She never saw one and had no clue what it was, but got two for me to try and do something with them. I made mashed potatoes with the first one. Just okay, we didn't notice much flavor from it. The next one will become a slaw, or maybe even just roasted.








Celery Root and Potato Puree
Adapted by There's Always Thyme to Cook
Printable Recipe 

3 large potatoes, peeled and cut into cubes (keep the cubes in a bowl of cold water until ready to use)
1 large celery root, tough outer parts removed, cut into cubes
1 cup heavy cream, half and half or milk (I used milk)
1/2  stick cold butter, cut into pats
salt, to taste

Special Equipment: food mill, food processor or a potato ricer

Place the potatoes in a large pot. Make sure to add enough water to cover vegetables by 2 inches and season generously with salt. Bring the water to a rapid boil. Add the celery root and cook until both vegetables are tender. Strain the celery root and potatoes.

Put the cream in a small saucepan and bring it to a boil. Put the celery root and potatoes through a food mill or a ricer over a large bowl. Add about the hot cream and butter. Stir until the cream and butter are thoroughly combined. Taste for seasoning. Keep warm until ready to use.

  2. I suspect a more equal proportion of celery root to potato would give you the interesting flavor you missed. A slaw is a great idea.

  6. Love it, love it! No wonder your celery root was hairy - it was right from the farmers market. I don't think I've seen one at mine - I'll have to look next time.

    My son-in-law was the first to introduce me to celery root puree and the celery root/potato combination. Delicious stuff.

  12. Carol, I cube celery root and roast it with beets, carrots, onions and garlic. Give it a splash of EVOO, and a sprinkle of kosher salt. We love it!

  16. Maybe you have to roast it first to get the flavor? Got me. But if it tastes like celery, I don't want it in my mashed potatoes!
    Don't mess with the Irish girl's mashed potatoes! :)
    I would think fresh from the farm is better than the ones sitting around for weeks.

  17. I've used celery root in a salad, but never with potatoes. I don't like celery at all, but I do like celery root. Sorry the flavor was lacking.

  18. Thanks for the education - I've honestly never even seen a celery root before (although I've heard about it). I can imagine how it would probably need a ton of butter to give it flavor. Can't wait to see your slaw though

  39. I never had celery root before! I wonder if it would taste ghood roasted, as roasting always dseems to bring out the best flavors in a vergetable.

  40. WE use celery roots in winter pea soup together with a big piece of ham , two leeks and a pound of split peas.Salt and pepper and maybe some aroma. It will be a thick soup, especially the second day. You can also put some kolbasz sausige i n it when it is done. Delicious.

  42. Celery root was one of my mom's favorite vegetables and she used to make a delicious salad out of it. She cooked the root, cubed it and tossed it in a mustardy vinaigrette. I'm going to see if I can find the recipe.

  51. I had the best Celery root slaw when I stayed with a friends family in France. she shredded it fine and simply mixed it with homemade mayonnaise, salt and pepper to taste. Absolutely wonderful!
