Celery Root and Potato Puree
Adapted by There's Always Thyme to Cook
Printable Recipe
3 large potatoes, peeled and cut into cubes (keep the cubes in a bowl of cold water until ready to use)
1 large celery root, tough outer parts removed, cut into cubes
1 cup heavy cream, half and half or milk (I used milk)
1/2 stick cold butter, cut into pats
salt, to taste
Special Equipment: food mill, food processor or a potato ricer
Place the potatoes in a large pot. Make sure to add enough water to cover vegetables by 2 inches and season generously with salt. Bring the water to a rapid boil. Add the celery root and cook until both vegetables are tender. Strain the celery root and potatoes.
Put the cream in a small saucepan and bring it to a boil. Put the celery root and potatoes through a food mill or a ricer over a large bowl. Add about the hot cream and butter. Stir until the cream and butter are thoroughly combined. Taste for seasoning. Keep warm until ready to use.

I suspect a more equal proportion of celery root to potato would give you the interesting flavor you missed. A slaw is a great idea.

ReplyDeleteCarol, I cube celery root and roast it with beets, carrots, onions and garlic. Give it a splash of EVOO, and a sprinkle of kosher salt. We love it!

Unfortunately, celery root tastes too much like celery for me to be able to eat it, but this mash does look creamy dreamy delicious!

ReplyDeleteI've used celery root in a salad, but never with potatoes. I don't like celery at all, but I do like celery root. Sorry the flavor was lacking.

ReplyDeleteWE use celery roots in winter pea soup together with a big piece of ham , two leeks and a pound of split peas.Salt and pepper and maybe some aroma. It will be a thick soup, especially the second day. You can also put some kolbasz sausige i n it when it is done. Delicious.

ReplyDeleteCelery root was one of my mom's favorite vegetables and she used to make a delicious salad out of it. She cooked the root, cubed it and tossed it in a mustardy vinaigrette. I'm going to see if I can find the recipe.

ReplyDeleteI had the best Celery root slaw when I stayed with a friends family in France. she shredded it fine and simply mixed it with homemade mayonnaise, salt and pepper to taste. Absolutely wonderful!
